The Craft:  French Emmental cheese is also known as Swiss cheese, This nutty, creamy, semi-hard cheese variety originated in the Emmental region in Switzerland but is widely produced in France. It's pale yellow interior and large holes, known as “eyes" is great for melting in fondues, grilled cheese sandwiches, quiches and soufflés.
