Lactose-Free Cheese Collection
If you’re lactose intolerant, you don’t have to give up cheese entirely; hard, aged varieties are naturally lower in lactose. In general, the longer a cheese ages, the less lactose it contains, while fresh cheeses tend to have more. Cheeses made from goat or sheep’s milk also usually have lower lactose levels than those from cow’s milk.
During production, milk is separated into curds and whey, removing much of the lactose. As the cheese ferments and ages, any remaining lactose is converted into lactic acid, reducing it even further. That’s why aged cheeses like cheddar, parmesan, and pecorino can still be enjoyed in moderation.
