Being lactose intolerant doesn't mean you have to give up all cheeses. For those who are lactose intolerant, we'd like to introduce our hard, aged, and lactose-free cheese varieties.
For a bit of background information... Generally, the longer cheese ages, the less lactose it contains. (Conversely, fresh cheeses tend to have higher lactose levels.) Additionally, goat and sheep milk cheeses typically have lower levels of lactose than cow's milk.
During the production of semi hard and hard cheeses, the milk is separated into curds and whey. As the curds are isolated (in order to turn them into cheese), the whey drains off, along with some of the lactose. Through the fermentation and aging process of the cheese, lactose is transformed into lactic acid, further reducing the lactose in the maturing cheese. So indulge in our well-aged cheddars, parmesans, pecorinos, and more, and reintroduce healthy cheese into your life.
