Being lactose intolerant doesn't mean you have to give up all cheeses. For those who are lactose intolerant, we'd like to introduce our hard, aged, and lactose-free yogurt cheeses.
For a bit of background information... During the production of these cheeses, the milk is separated into curds and whey, with the whey containing most of the lactose. Through the fermentation process, lactose is transformed into lactic acid, further reduced during the aging of the cheese. Generally, the longer the cheese ages, the less lactose it contains. Conversely, fresh cheeses tend to have higher lactose levels. Additionally, goat and sheep milk cheeses typically have lower levels of lactose compared to cow's milk. So indulge in our well-aged cheddars, parmesans, pecorinos, and more, and reintroduce healthy cheese into your life.
