Fromage De Paulette

The Craft: Fromage De Paulette is a French cheese named in memory of Paulette Fink, a French Jewish nurse for the Red Cross and a fighter in the French Resistance during WWII. She saved 1,500 Jewish orphans from the Nazis during the war. After the war, working for the Jewish Brigade, she smuggled refugees into Palestine and established 11 orphanages for abandoned children who had survived the Holocaust. This wonderful cheese is a semi-soft, washed rind cheese in the style of raclette or Port Salut and is made with Normandy milk. It's orange rind has a pungent smell, while the interior has a soft velvety and creamy texture and a mild, savory and slightly sweet taste. It can be used as a melting cheese over potatoes and pickles similar to raclette.

Ingredients:
1 Granny Smith apple, sliced
2 tbsp The Cheese Guy Fig Swiss Preserves
2 slices bread
1 The Cheese Guy Formage de Paulette
Honey
Directions:
1. Slice 1 Granny Smith apple into thin slices.
2. Spread 2 tbsp of Fig Swiss Preserves on both slices of bread.
3. Slice your Formage de Paulette and place it on top of the Fig Swiss Preserves.
4. Add your sliced apples and place the other slice of bread on top.
5. Make sure your pan is hot enough to get that nice crust.
6. Drizzle some hot honey on top before eating. Enjoy!
