Ingredients:
For the Balsamic Vinaigrette:
¼ cup balsamic vinegar
1 teaspoon honey or maple syrup
1 garlic clove, grated
2 teaspoons Dijon mustard
½ teaspoon sea salt
Freshly ground black pepper
6 tablespoons extra-virgin olive oil
For the Salad:
Cooked quinoa
Cooked lentils
Beets
Red onion
Fresh dill
Radish
Pumpkin seeds
Sunflower seeds
Goat cheese
Directions:
1. Make the vinaigrette: In a small bowl, whisk together the balsamic vinegar, honey, garlic, Dijon mustard, salt, and pepper. Slowly drizzle in the olive oil while whisking continuously until the vinaigrette is emulsified and creamy.
