Cranberry Arugula Salad

Ingredients:
6 oz arugula
1 Persian cucumber, quartered and chopped
½ red onion, thinly sliced
½ block The Cheese Guy cranberry cheddar, sliced thin
2 tbsp shelled pistachios
2 tbsp chopped walnuts
2 tbsp pine nuts
1½ tsp lemon zest
Juice of ½ lemon
2 tbsp olive oil
¾ tsp kosher salt
½ tsp freshly ground black pepper
Directions:
1. In a large bowl, toss together the arugula, cucumber, and red onion.
2. Add the pistachios, walnuts, and pine nuts.
3. In a small bowl or jar, whisk together the lemon juice, lemon zest, olive oil, salt, and pepper.
4. Top with thin slices of cranberry cheddar drizzle with dressing just before serving.
