The distinctive blue/green veins is mold that's made from cultures of penicillium. The soft texture and slightly pungent, earthy, salty flavors add a punch of flavor to salads, sandwiches, and dips. Try using it to make blue cheese dressing for drizzling over vegetarian roasted, charred Buffalo Cauliflower dish.
