The Craft: Produced in the La Mancha region of Spain from pasteurised sheep's milk. It is a certified PDO (DOP) cheese. It's a semi-hard cheese  with a buttery richness and nuttiness, sweet undertones and an ivory-yellow color cheese and an inedible brown-beige rind.
