Ingredients:

For the Balsamic Vinaigrette:

¼ cup balsamic vinegar
1 teaspoon honey or maple syrup
1 garlic clove, grated
2 teaspoons Dijon mustard
½ teaspoon sea salt
Freshly ground black pepper
6 tablespoons extra-virgin olive oil

For the Salad:

Cooked quinoa
Cooked lentils
Beets
Red onion
Fresh dill
Radish
Pumpkin seeds
Sunflower seeds
Goat cheese

 

Directions:

1. Make the vinaigrette: In a small bowl, whisk together the balsamic vinegar, honey, garlic, Dijon mustard, salt, and pepper. Slowly drizzle in the olive oil while whisking continuously until the vinaigrette is emulsified and creamy.

2. Assemble the salad: In a large salad bowl, combine the cooked quinoa, lentils, beets, red onion, fresh dill, radish, pumpkin seeds, and sunflower seeds.

3. Add the goat cheese: Crumble the goat cheese over the salad.
4. Toss and serve: Drizzle the balsamic vinaigrette over the salad and toss gently to coat. Serve immediately.
