Upside-Down Tomato Burrata Tarts

Ingredients:

Olive oil
Balsamic vinegar
Italian seasoning
6 cherry tomatoes, halved
1 square puff pastry (thawed)
1 ball The Cheese Guy burrata cheese
Fresh basil leaves, torn
Salt & freshly ground black pepper

 

Directions:

1. Drizzle olive oil on a parchment-lined sheet pan.


2. Add a small splash of balsamic vinegar right over it.

3. Sprinkle Italian seasoning evenly.


4. Place 6 cherry tomato halves, face-down, onto the oil + vinegar.


5. Lay one square of puff pastry over the tomatoes.

6. Prick the top of the pastry with a fork a few times to vent.


7. Bake at 375° for 20–25 minutes, until golden and puffed.


8. Carefully flip the tart using a spatula thent top each with a small cloud of burrata, a glug of olive oil, fresh pepper, and torn basil. Enjoy!

Sheet Pan Gnocchi

Ingredients:

1 package of gnocchi
2 tbsp olive oil
Couple cloves garlic
Veggies of choice
1 can fire roasted diced tomatoes
1 ball of The Cheese Guy burrata cheese

 

Directions:

1. Preheat oven to 450 degrees.


2. Place all ingredients except burrata on a parchment lined baking sheet.


3. Mix to combine.


4. Place burrata in the middle of the mixture.


5. Bake 40 minutes
