Limone Ricotta Gnocchi

Ingredients:

1 (15oz) container of Ricotta Cheese
3 egg yolks
1 cup of 00 flour or AP flour
1/4 cup grated Parmesan
1 tsp salt
1/4 tsp black pepper
5 tbsp butter
1-2 lemons depends on the size

 

 

Directions:

1. Mix together your ricotta, eggs, salt, pepper, and Parmesan
2. Add in your flour and mix until combined you don’t want to over mix
3. To a flat surface add flour and knead your gnocchi for 1 minute until it’s not sticky
4. Cut into 8 pieces and roll into 1/4 inch thick and cut them into 1 inch gnocchi pieces
5. Add your gnocchi to your salted boiling water and wait for them to float to the top this should take about 6-8 minutes
6. Drain and immediately add in your butter and lemon and stir aggressively to get that thick sauce
7. When ready to plate grate more Parmesan on top and serve!

Spaghetti Squash Baked Ziti

Ingredients:

1 Spaghetti squash
Olive oil
1 Ricotta Cheese, Fresh Organic
1 Cottage cheese
1 Mozzarella
Marinara sauce
 

Directions:

1. Preheat oven to 400°.
2. Cut the squash in half, and scoop the seeds before or after roasting.
3. Brush with olive oil, and add salt.
4. Place the squash face down on a baking sheet and roast for 40–60 minutes.
5. Fluff the strands with a fork while it’s hot.
6. Add ricotta, cottage cheese, mozzarella, and marinara right into the shell.
7. Mix, taste, adjust, and enjoy.
