The Craft:  Ricotta Salata is made from the whey of whole sheep's milk - Pecorino - sourced from the pastures of Sardinia, Italy,. The cheese is salted, pressed and aged for a number of weeks. When aged, the cheese imparts a dry, salty and tangy taste and has a crumbly, spongy, feta like texture and mouthfeel. Its consistency is perfect for crumbling over pastas, salads or for baking. Commonly used in the traditional Sicilian dish, Pasta alla Norma with eggplants, tomatoes, basil, and garlic,
