Tilsit
The Craft: We resurrected this couple hundred year old Prussian/Danish original cheese and made it in the US, with milk from pasture raised cows grazing in the Green Mountains of Vermont. It's a unique blend of a creamy havarti texture and a taste of Gruyere/Swiss nutiness. Try melting it in fondues, pairing with raspberry jam and walnuts or with crisp fresh apples and pears.
Pairing: Dark beer, IPA,, Sauvignon Blanc

Tilsit Walnut Fillo Bites

Ingredients:
1 package of fillo dough cut in half
1/2 jar of @thecheeseguy fig jam
1/4 cup crushed walnuts
Sprinkle of cayenne pepper
Tilsit cheese @thecheeseguy
1 stick of butter
Drizzle of honey for garnish (optional)
Directions:
1. Cut your fillo dough in half saving the rest for a different time
2. Butter some of the sheets
3. Add your fig jam, walnuts, and cayenne pepper
4. Place your Tilsit in a line and start rolling very tightly
5. Cut into 1-inch circles and add it to a butter muffin tin
6. Add some more butter on top and bake on 350 until golden brown
7. When ready to serve drizzle honey and some crushed walnuts on top
