The Craft: A trademarked name and recipe by The Cheese Guy, "Viney Sheep" pays homage to cheeses like Winey or Drunken Goat. It's an aged pecorino/ sheep's milk cheese made in Sardinia, Italy, soaked in a special kosher red Italian wine for 1-2 months, imported to the US and aged for another 9 months in our aging cellars in NY. Tasting notes include a unique caramel sweetness, subtle hint of fruit, and a tantalizing salty bite. Unusual for a pecorino, it's suitable for vegetarians and kosher consumers and made with vegetarian rennet. It's a quintessential table cheese to be eaten as an appetizer.
